Could this be called a Deconstructed Omelet?

     Picture this: eggs, mushrooms, goat cheese, sundried tomatoes. If you were given these ingredients and told to make something with them, I'd be willing to bet nearly every one of you would make an omelet.  There's nothing wrong with that, I love omelets. I'm going to show you how to take these ingredients and turn them into a protein-packed dish that would be perfect for breakfast or brunch.       I really like mushrooms, the earthy flavor satisfies my hunger for natural tasting food.  For this recipe, take two Portobello mushrooms, (look for caps with a wide lip), remove the stems and use a spoon to scrape out the gills, being careful not to tear the caps.  Spray each side lightly with cooking spray and place on a lightly sprayed baking sheet.       Dice your sundried tomatoes.
