 I'm Back!

     I'm back!  I haven't died or done anything drastic, I've just been away from blogging because my iPad is old and freezes up a lot.  Thanks to my son and daughter-in-law, I have a brand new laptop-a 2-in-1 actually.  It's taking some, (okay, a lot of) getting used to. It was a very merry Christmas for my family, I hope your was too.
     I haven't given up my quest for good health and weight loss.  In fact, I've stepped up my exercising.  Walking is my favorite outdoor exercise, especially hiking in the woods.  I live a half mile from a beautiful park that has several hiking trails. Bad weather forces me to walk on the treadmill. Either way, I walk at least one mile daily, rain, snow, sleet or sunshine.  Today will be my 217th consecutive day.  I begin my exercising with either five minutes of planking or a half hour of yoga.  When I was in high school, I watched Lilias, Yoga and You on PBS, I fell in love with Hatha yoga and did it along with Lilias every chance I got. This morning I got curious and checked YouTube-and yay! it's there! I thoroughly enjoyed a half hour of blissfully yoga-ing.  After yoga, (or planking), I workout a specific body area for about 10-15 minutes, I do a different area each day. I take a rest day from that every Saturday.  It's the only exercising that I don't do everyday.  I then do a Streaks Workout; download the app to your smartphone, it's great!  The app has several exercises, you can choose to either do a 6, 12, 18 or 30 minute session.  I either do 6 or 12, however, I don't finish it in those time limits, but that's okay. Each day the app will randomly select exercises for you and keep track of how many and the time it takes you to do them.  

That's enough chatter. It's recipe time. This is so good!


Jamaican Pork Stir Fry
makes 4 servings

1 T cooking oil
1 16 ounce package frozen sweet pepper and onion stir fry veggies
12 ounces pork strips (I cut strips of boneless pork chops)
2-3 tsp Jamaican jerk seasoning
1/2 c bottled plum sauce
soy sauce (optional)
peanuts (optional)
2 c hot cooked rice or pasta

In a wok or large skillet, heat oil over medium-high heat.  Add frozen veggies, cook and stir for about 5-7 minutes, or until veggies are crisp-tender.  Remove vegetables from pan.

Toss pork with jerk seasoning and add to pan.  Add a little more oil if necessary.  Cook and stir for 2 to 5 minutes until pork is no longer pink.

I didn't put peanuts in mine and used brown rice.  It totals about 338 calories per serving.

There's Something Fishy About It

     How ya'll doing?  I hope everyone is enjoying the last lazy, hazy days of summer.  Fall is officially right around the corner.  Shew, summer absolutely flew by!  Kids are already back in school. Mediterraneyum!

     It's been more than a hot minute since I've made an entry here. In fact, it's almost been a year. The truth isn't because I've been too busy-no the truth is much, much more shameful: I've been too lazy. Too lazy to write, and too lazy to eat the way I know I should eat. However, on the bright side, I have recently passed consecutive day 1000 of walking at least one mile. It's something that five years ago I would have said would be impossible.       I have, for the last couple of weeks, returned to eating more whole, less processed foods. In that short time, I have already lost a few pounds, and more importantly, have begun to feel great!       At the end of each of these blog entries I have always written, " Nothing tastes as good as healthy feels!!". That is a lie, a fallacy, fiction, untruth, falsehood, fib, whatever word for it you choose. What I meant in the statement is that healthy feels better than food tastes. I think I

Colorful and Tasty
