Spice Things Up!

You've found a great recipe and you're getting the ingredients out of your cupboard.  You open the door to where you keep your spices and there's literally dozens of little containers crowded together, you have to take most of them out before you find the one you are looking for.  Frustrating, isn't it?  I know, I empathize.

I got tired of the frustration, so I decided to remedy the situation.

I discovered this great way to get my spices out of the cabinet and get them organized.  I found these magnetic babies on eBay, had planned on putting them on my fridge, but decided instead to put them on cookie sheets.  It was a little difficult finding inexpensive steel cookie sheets though.  I ordered these online from Walmart, luckily they were on clearance.

A few weeks ago I posted a recipe for Jamaican Pork Stir Fry.  I couldn't find any Jamaican Jerk seasoning at my local grocery stores.  I already had everything to make it with, so, it saved me some money.  I also make my own taco, Italian  and Greek seasonings.

I'll share them with you.  Just combine the ingredients, keep in a lidded container.

Jamaican Jerk Seasoning
1 1/2 tsp ground allspice
1 1/2 tsp dried thyme
1 tsp curry powder
1 1/2 tsp paprika
1 tsp sugar
1/2 tsp salt
3/4 tsp pepper
1 1/2 tsp cayenne pepper
1/4 tsp nutmeg
1/4 tsp cinnamon
1/8 tsp ground cloves

1 1/2 tsp onion powder
1 1/2 tsp garlic powder

1/2 tsp oregano

Italian Seasoning
2 Tbs dried basil
2 Tbs dried oregano
1 Tbs dried thyme
1 Tbs dried rosemary
1 Tbs garlic powder
1/4 tsp onion powder
1/4 tsp salt

Greek Seasoning
1 Tbs garlic powder
1 Tbs dried basil

Colorful and Tasty

So last time I told you about cucumber soup and said I was going to triple the recipe the next time I made it.  Well...I had planned to do just that, however; I went to the farmers market, went crazy and bought a ridiculous amount of cucumbers, therefore; I will be making quadruple the amount. 🤣      You know what one of the best things is about fresh produce?  The colors!  The more colorful the dish, the more nutritious.      This recipe is full of flavor.  Do not let the fact that good balsamic vinegar is expensive stop you from making this fabulous side dish, below the recipe is a method of taking cheap balsamic vinegar and turning it into what has more of the taste of a higher quality vinegar.   Balsamic Strawberry Asparagus serves 6 1 pound asparagus, ends trimmed 1 Tbs olive oil 1 cup balsamic vinegar* about 20 medium strawberries, sliced 10 basil leaves, chopped salt...

There's Something Fishy About It

How ya'll doing?  I hope everyone is enjoying the last lazy, hazy days of summer.  Fall is officially right around the corner.  Shew, summer absolutely flew by!  Kids are already back in school. Speaking of kids, my youngest grandchild is coming tomorrow to spend a week with me.  I'm excited!  We will have so much fun playing, going to the mall for Dippin' Dots, and whatever else we want to do .  I cleaned my house today, Hurricane Lillian hits tomorrow. 🤣      I told Lillian she can help me cook our meals, and I'm sure we will be eating salmon at least once, so here is a very tasty and colorful salmon entrée.      Mix marinade and pour it over the salmon in a glass dish, turn to coat well.  Put it in the refrigerator and don't think about it anymore until it is time to cook dinner. .     Next, make the relish. Just mix it up in a medium bowl.  That's it, nothing more exc...

It's Eggsactly Easy!

Is it easy?  Eggsactly so!     Eggs really are the incredible food. Such a tiny thing, yet, those little things are stuffed full of yummy, healthy nutrition-except carbs-they are happily lacking in that category.  According to the AEB, (American Egg Board), 1 egg (50g) has 70 calories and 0 carbohydrates, making them the perfect addition to a low carb diet.  Eggs are a little high in cholesterol, so if that's a concern you want to be careful and don't go hog wild and eat a dozen of them every day.      Eggs can be prepared in nearly any way you can think of, but for those of us who are weight conscious, boiled is a wonderful way of cooking them.  Boiled eggs are one of my favorite snacks, as well as a favorite breakfast item.  Anyone other than me put sriracha sauce on their eggs? Yummy!      How many times have you attempted to peel a boiled egg only to get frustrated because it was hard t...
