Drunken Orange Cranberry Sauce

     I, and I apologize, have yet again neglected this blog. I'm back, and my early New Year's resolution is to write at least once per month-no excuses!  Soooo, let's celebrate this promise by getting drunk by eating some naturally sweetened cranberry sauce! No, we won't get drunk by just eating this recipe-there is only one measly tablespoon of whiskey in it.  However, since there will be a whole bottle minus one tablespoon, we can put our shot glass collection to use.🤣
     I love anything cranberry!  Cranberries are so pretty, and have a lot of good stuff in them.  According to some studies, cranberries contain nutrients that act as antibiotics, help prevent cancer, and kidney stones, also helps control cholesterol, helps maintain gastrointestinal and oral health.  Also, cranberries have proven to combat the herpes virus.  So let us all drink a glass of cranberry juice, (not cocktail) every day!
    How was everyone's Thanksgiving? I'm just waking up from a food coma. Seriously, any thoughts of healthily eating go flying out the window for me on holidays. No wonder-look at this photo:

      It's the buffet table taken from each end.  Our family gathers at my cousin April's house for holiday celebrations and I eat...and eat...and then I eat some more.  I mean who wouldn't?  Again, look at the photo!  Roasted turkey, smoked turkey, ham and all the yummy sides that go along with the meats. I'm not going to discuss the desserts. 🤣
     And now that I'm starting to recover, in a little more than a week, it will be Christmas Eve and time to do it all over again.  I weigh myself every Tuesday, I feel sorry for the scales Christmas morning and New Year's Day.
     I'm totally digressing, so let's get back to the cranberry sauce.


     Do you know how to tell if cranberries are good?  They bounce!
     Put your cranberries, juice, maple syrup, vanilla extract and bourbon in a small saucepan, cook until the sauce gets thick.
     
     If you've never cooked cranberries before, don't let the popping sound alarm you, it is normal, it's the cranberries bursting.

     After the cranberry mixture has thickened, pour it into serving bowl and refrigerate. Garnish with orange zest before serving.
Orange Cranberry Sauce
1 pound fresh cranberries
1 cup orange juice
1/2 cup maple syrup
1 tsp vanilla extract
1 tbs whiskey, bourbon or brandy
Combine cranberries, orange juice, maple syrup, vanilla extract and whiskey in small saucepan. Heat on high until it begins to boil, then turn down to medium low, cover and cook until mixture thickens, about 10-15 minutes.  Remove from heat and set aside to cool. After it has cooled, pour into serving container and refrigerate. Garnish with orange zest before serving. Serves 6

There's Something Fishy About It

     How ya'll doing?  I hope everyone is enjoying the last lazy, hazy days of summer.  Fall is officially right around the corner.  Shew, summer absolutely flew by!  Kids are already back in school. It's Eggsactly Easy!

     Is it easy?  Eggsactly so!     Eggs really are the incredible food. Such a tiny thing, yet, those little things are stuffed full of yummy, healthy nutrition-except carbs-they are happily lacking in that category.  According to the AEB, (American Egg Board), 1 egg (50g) has 70 calories and 0 carbohydrates, making them the perfect addition to a low carb diet.  Eggs are a little high in cholesterol, so if that's a concern you want to be careful and don't go hog wild and eat a dozen of them every day.      Eggs can be prepared in nearly any way you can think of, but for those of us who are weight conscious, boiled is a wonderful way of cooking them.  Boiled eggs are one of my favorite snacks, as well as a favorite breakfast item.  Anyone other than me put sriracha sauce on their eggs?
