Ahh...Simply Comforting with a Southwestern Touch

     It's January, and it's cold.  I need comfort!  This weather requires a few simple things: a cozy blanket, Netflix and soup.  None of those requirements need to be anything but simple. Comfortably simple.

     Chili is always wonderful on cold days.  Personally, I don't recall ever eating chili that wasn't delicious.  But what about a different style of chili?  I buy a lot of chicken, I think I'll make some white chili, but not regular white chili, I'm going in a southwesterly direction with this stuff.  A special blend of spices will make this pop with favor.  Also, because I want to take a nap I'm going to throw it all into the slow cooker.  I normally would cook it in my Dutch oven, but not today.  Besides, my crockpot has been neglected far too long.

     First, I'm going to mix the spices.  Yummy!

     I will cook the chicken and onion about 5 minutes.  If I was going to make it on the stovetop, it would be at this point that I'd add the broth, chiles and spices, but I'm going to use the crockpot.

     After the chicken is cooked through, I put all of the ingredients into the slow cooker, now, it's naptime!

     Okay, I'm awake and hungry!  Some grated Monterey Jack cheese would be amazing with this, but I don't have any.  Boo.


Southwestern White Chili
serves 5

1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon cilantro leaves
1/2 teaspoon oregano leaves
1/8 teaspoon ground cayenne pepper
1 tablespoon olive oil, 
1 1/2 pounds boneless skinless chicken breast cut into 1/2 inch cubes
1/4 cup chopped onion
1 cup chicken broth
1 (4 1/2 ounce) can chopped green chilis
1 (19 ounces) can white kidney (cannellini beans), undrained


  1. Mix spices in small bowl. Set aside.
  2. Heat oil in large skillet on medium-high heat. Add chicken and onions; cook and stir about 4-5 minutes, until chicken is cooked through.
  3. Stir in broth, chilis and spices, bring to a boil.  Reduce heat to low; simmer 15 minutes.
  4. Stir in beans, simmer, uncovered about 5 minutes.
   Nutrition info: 283 calories; 7g total fat; 87mg cholesterol; 591mg sodium; 18g carbohydrates; 6g fiber; 37g protein

There's Something Fishy About It

     How ya'll doing?  I hope everyone is enjoying the last lazy, hazy days of summer.  Fall is officially right around the corner.  Shew, summer absolutely flew by!  Kids are already back in school. Mediterraneyum!

     It's been more than a hot minute since I've made an entry here. In fact, it's almost been a year. The truth isn't because I've been too busy-no the truth is much, much more shameful: I've been too lazy. Too lazy to write, and too lazy to eat the way I know I should eat. However, on the bright side, I have recently passed consecutive day 1000 of walking at least one mile. It's something that five years ago I would have said would be impossible.       I have, for the last couple of weeks, returned to eating more whole, less processed foods.
